Raspberry Chiffon cake

Image
Raspberries Chiffon Cake from Frozen Raspberries There are no such thing as a must have raspberries chiffon cake recipe or a orange chiffon cake recipe. To me, so long as you master 1 chiffon cake recipe, I will use it to experiment on different flavors. I can say, I am a experimental baker. I love to play with one recipe I master. I will start using whatever resource at home to bake a new kind of cakes. I started with a Pandan Chiffon Cake. A recipe given by my friend. Then I did an error, a good error, this error gave me a more softer texture Chiffon. From there, I started to play with tea, juices, other kinds of flour etc. Raspberries has a lot of seeds. So it is always better to blend them, sieve the seeds off and use the raspberries juice only.  We need to bake at low temperature to get a well raised cake . A Ingredients 150g plain flour 50g corn flour 1.5 tsp baking powder 170ml Raspberry puree (sieve off seeds) 50ml corn oil 5 egg yolks B ...

Pumpkin Fish Head soup

Image
I was not a fan of fish head soup. Actually, I do not like fish. So every month when I clean the fishes and cut up the fish filet for my MIL, I will end up with at least 4 fish heads. We are talking about fish heads from snappers and threadfin. Each fish weight 2.5 kg and above.  So sometimes, I will end up with large fish heads too. All these are bought with cash. So I need to turn these into delicious meals so that the fresh fish head is being appreciated. For a start, since these fishes are very fresh, I will steam them with salted vege (teochew steam). Everyone loves it except my MIL was not impress.  She reprimanded us that salted vege is not good for our health.  So I started to explore other ideas like curry or assam fish head. I even cook it as sweet and sour fish. The last takes a lot of my time, though delicious but not much meat to eat. After learning from a colleague that her maid cook fish head soup just by boiling them for 1 hour, I decided to try out. ...

Food Hiroshima trip, Japan 180324 to 180402

Image
We love Japanese food. Maybe it is quite similar to our daily diet? Rice, soup, sushi. All our favourite. In addition to meals, we also love snacks in Japan. I am not sure why, the cakes and bread sold in Japan is always good. I believe maybe because of the basic ingredients they owned. The flour? maybe.... maybe.  The following are food that we ate and love while we were in Hiroshima from 24 Mar to 2 Apr in 2018. Some gives us good memory and some don't. Try them out when you are in Japan. 1) Mister Donut - You see Mister Donut in most of its Shopping Mall. I started having this while I visited Fukuoka in Oct 2017. We both fall in love with it. The donut is soft and they refill your coffee when you finished. Good service and delicious donut 2) Matsunoya Tonkatsu  - Our favourite Japanese fast food ever since we visited Tokyo in April 2017. 1st it is cheap with restaurant standard kind of food. It taste better than those served in Singapore Japanese restaurant. The ...

Mee Jiang Kueh or Chinese Pancake

Image
Mee Jiang Kueh / Chinese Pancake MJK - my love for this grow fonder when I get older. When I was young, we have this as a treat on some weekend. When my late "ah ma" (mummy)  will pass us some pocket money, really, pocket money from her "zhao tee goo" illegal hawking selling home grown chilli, papaya or lime. My brothers and me will walk 1 and a 1/4 mile to this Punggol wet market. There was a stall opposite the wet market, at the junction where we walk to the movie theatre.  They have at least 5 small pancake pans lined in a row making pancakes on the spot. Coconut or peanut. The 2 original flavours. At that time, my pancake world in my "dictionary" is only this kind of pancake. Funny how, during that time, I am not a fan of Mee Jiang Kueh. I prefer those Noya layered kueh. Also, I hate coconut pancake. 50 years later, I started to love Mee Jiang Kueh and orange coconut fillings is my favourite. I got this recipe by coincidence. I happened to voluntee...

Japanese Ramen, Vietnamese Pho

My love to bring back instant noodles when  I travel. Tasting the instant noodles also let me know about the local culture. What are they eating for instant noodles. Below are the noodles I tasted. Sorted by country From : Japan-Ramen.  You can find this in those "tourist supermarket. I did not see this in the supermarket in the remote areas. If you love thin noodles, you will like this. The thick brooth (like tonkatsu soup-though not exactly taste like it) will make you happy if you are craving for tonkatsu soup based noodles. From Japan- Udon with dried Tofu. A new find for us while shopping in a supermarket at a remote area near Kirin Beer factory. Cost only 98 Yen. The udon is those fresh udon and there is a dried tofu. Very good indeed. I guess it will be my new must bring home item from Japan in future. From Japan - Ramen :  Saw this at a Supermarket near Kirin Beer Factory. Cost less than SGD2 for a packet of 5. Saw a  Japanese hous...

171022 Moganfield's at Suntec

Its my birthday. So we try out this place for ribs. #Morganfield's Ribs We spent a total of $112 for what we have today. Not cheap but looking at its quality, still not too bad. Immediately I like this place upon entering the air-conditioned area. Tables are big, chairs are comfortable There is a promo going on. But only for spending above $400 Saute mushrooms. Quite well done. The problem is, mushroom is like a sponge. If you fry them, the likely hood of them eating up the oil is very high. So I rather choose not to eat too much cause my stomach cannot take too oily food. Now the main star. Its an American ribs restaurant.  So we ordered their house specialty. Full slab priced between 40 to 50 dollars. The ribs very well done. Soft meat easily tear from its bones and not tough to bite. Delucious.  We tried the ribeye. Though  it is nice, there is nothing to shout about. I should say it is better to have their ribs when you are here

10 Sep 2017 - Happy 21st birthday Its my daughter's birthday. So I made her a cake she requested. With the bluberries tea leaves she brought home. I used he tea leaves, tweet the pandan cake recipe and ta da, here is the cake created. Some tell me it is a little to much berries. But after we cut and ate it, we find that this combination is just nice. We finished half of the cake in less than 30mins.  Now, it is time to indulge.  My daughter wanted a restaurant somewhere near the sea. Out of the town. So we decided to choose East Coast Park. Decided to revisit Sandbank as we tried before and quite good. My daughter goggled and made her pick from the menu from the website. When we reach there, she realised she checked on the wrong website. She has mistakenly checked on Atmosphere Bistro instead. So, we decided to go with the flow. Try out Atmosphere Bistro.  http://atmosphere-bistro.com.sg/east-coast-park-parkland-green/ It is a good mistake. Food is good,...
